May is a time of warmer weather, longer days and a shift from cosy comforting meals towards lighter dishes.

You will see spring produce in the shops and markets - asparagus, broad beans, peas, chard, broccoli, new potatoes, rhubarb, strawberries and more. If you are able to source local produce in a farmers' market that is great, but if not they are usually still widely available in greengrocers and supermarkets.

Readers' favourites for April

The three most viewed recipes in April were crunchy oat biscuits, banana flapjacks and almond slices.

Crunchy oat biscuits are made using wholemeal flour and oats. They are a tasty treat to enjoy with a cup of tea or coffee. I usually make a big batch and keep some in the freezer for later.

Banana flapjacks are made without refined sugar or butter. They contain wholesome ingredients and natural sweetness making them a healthy snack.

Almond slices are frangipane cake slices with a buttery shortbread base. I make these regularly as they are one of my favourite cakes.
