Almond blossom time

In February the hills of the Alpujarra (in southern Spain) burst into bloom and the air is full of the sweet scent of almond blossom. The pink and white blossom is a sight to be seen and this has prompted me to share a few of my favourite recipes using ground almonds.

Recipes using almonds

Pear and almond tart

A delicious tart filled with almond frangipane and pears which is delicious either hot or cold.

Swiss chard with almonds and raisins

This quick and easy vegetable side dish is a tasty way to enjoy your greens.

Mini Bakewell tarts

These individual pastries are filled with red fruits and frangipane and topped with icing.

Lemon drizzle cupcakes

Moist, sticky and citrussy, these mini lemon drizzle cakes are perfect for dessert or a teatime treat.

Sweet almond pastry

Sweet almond pastry can be used in place of traditional shortcrust or sweet shortcrust pastry for a variety of sweet pastry dishes.

Sweet potato cookies

These soft cookies are made using sweet potato and ground almonds and have a delicious marzipan flavour.
