Head to the Med!


It may not be summer holiday time yet but you can still enjoy a taste of the Mediterranean.

Fortunately many ingredients used around the Med such as tomatoes, peppers, courgettes, aubergines and beans are available in other regions so we can make our own versions of popular Mediterranean dishes. Why not make a pot of ratatouille, minestrone or tomato and bean soup? And if you have a good supply of tomatoes you could make a batch of fresh tomato sauce to add to pasta dishes such as cannelloni or ravioli.

Olives and olive oil also feature in many southern European dishes including tomato and olive bruschetta, rosemary focaccia, muffin tin focaccia, no knead olive bread and rosemary and olive rolls.

And for dessert you could try this zesty French lemon tart, Catalan panellets or affogato coffee and ice cream dessert.

Mediterranean vegetable stew

Aka ratatouille, this colourful vegetable side dish is transformed into a main meal with the addition of beans.

Sweet potato gnocchi

Made using sweet potatoes, flour and egg, these Italian dumplings are simple to make and are suitable for freezing.

Minestrone

This tasty vegetarian soup is made using a combination of fresh and pantry ingredients and is perfect served with crusty bread.

Rosemary and olive rolls

These tear and share bread rolls are packed with Mediterranean flavours and pair well with soups or salads.

Rosemary focaccia

This focaccia is made using generous amounts of extra virgin olive oil and topped with rosemary and sea salt to bring you a taste of Italy.

Stracciatella ice cream

This creamy vanilla ice cream with chocolate strands tastes as good as any artisan ice cream. It is simple to make and no ice cream maker is needed.
