Summer meal ideas


My go to meal idea for the summer is risotto. It is quick and easy to prepare and is a good way to use whatever vegetables I have to hand. And as it is cooked using only one pan it does not create too much washing up which has to be a plus!

With the summer weather in full swing I have selected a few recipes to help you save time in the kitchen and also make the most of seasonal produce.

Broad bean risotto

This flexible one pan meal is simple to prepare and will save you time in the kitchen.

Roast vegetable pesto pasta

This easy pasta dish with pesto and lemon is a perfect way to make the most of seasonal vegetables.

Broccoli and blue cheese risotto

This simple risotto dish is flavoured with creamy blue cheese and is quick to prepare.

Falafel

Falafel are easy and cheap to make. They can be prepared in advance and take only minutes to cook making them perfect for summer days.

Summer vegetable quiche

This vegetable quiche is a perfect way to make use of seasonal vegetables and can be served either warm or cold.

Spicy bean burgers

Spicy bean burgers are another easy and cheap meal idea. They are perfect served in a bread bun with garnish and toppings.
