Make ahead dishes


I have been planning to make individual portions of a nut based dish suitable for making ahead and freezing. I created these mini nut roasts which are made using a mixture of chopped dried apricots (a favourite of mine for flavour), chopped nuts and other basic ingredients and cooked in a muffin tin. Each one is just the right size for a single serving.

They are perfect for freezing and can be defrosted and reheated when needed. They are a perfect "ready meal" but unlike processed foods they are made using real ingredients and you will know exactly what you are eating.

Here are a few other "make ahead" recipe ideas.

Lentil chilli

Lentil chilli is one of my go-to make ahead meals. It is simple to make and can be stored in the fridge for several days.

Falafel

Falafel are patties made using chick peas and are simple and cheap to make.

Nut cutlets

Nut cutlets can be cooked in only a few minutes making them perfect for busy days.
