February newsletter

With the chilly weather over the last few weeks, I've been making lots of filling and comforting foods such as cakes, puddings, and soups.

I recently published a recipe for ginger sponge pudding. It is oven baked, has a honey and lemon syrup and is just the thing for winter days. Bake, turn over onto a plate and top with extra syrup for a gooey, sticky treat. What I like about this pudding (apart from it being simply delicious) is that it is baked in the oven and no lengthy steaming is needed.

Another recent recipe is for beans in tomato sauce. This is my homemade version of British baked beans. Serve on toast, use as a filling for jacket potatoes or enjoy alongside a cooked breakfast. Watch this video to see just how easy this dish is to prepare.

You may also like to try one of these other simple recipes using pulses such as vegetarian cottage pie which has a topping of sliced potatoes over a lentil ragout, red lentil and spinach dahl, three bean chilli, vegetarian chilli or ratatouille with beans.
