Freezer friendly meals


I'd like to share with a you a few freezer friendly recipes which I make regularly and freeze ready for busy days. I don't buy or eat ready made ultra processed foods. Instead I like to prepare freezable dishes so that I can serve wholesome homemade foods even when I'm short of time.

These individual nut roasts are something I started to make for that very reason. I cook a batch, leave them to cool and then transfer to a freezer bag. I find these very useful as they can be defrosted and reheated in a microwave in minutes ready to serve with the rest of our meal.

Similarly, nut cutlets are perfect for freezing. Defrost however many you want, cook for a few minutes each side and serve with roast potatoes or rice and vegetables.

Other recipes including chilli and dahl are also great for freezing. I freeze them in individual portions ready to use for a quick and easy dinner.

Individual nut roasts

These mini nut roasts are baked in a muffin tin and are perfect for freezing. They are delicious served as part of a Sunday roast dinner, for Thanksgiving or for Christmas dinner.

Veggie chilli

This veggie chilli is a lentil based dish which is perfect for making in bulk. It pairs well with rice or jacket potatoes.

Three bean chilli

Made using three varieties of beans, this vegetarian chilli is a perfect make ahead meal.

Lentil and spinach dahl

This Indian inspired dish is quick and easy to prepare and pairs well with rice or naan.

Nut cutlets

Nut cutlets are also perfect for freezing. Once defrosted they can be cooked in minutes.
